Ingredients
2 packs Ramen noodles (crushed, seasoning packet discarded)
4 cups Green cabbage (shredded)
1 cup Carrots (shredded)
1/2 cup Green onions (sliced)
1 medium Red bell pepper (thinly sliced)
1 cup Edamame (shelled, cooked)
1/2 cup Almonds (sliced, toasted)
2 tablespoons Sesame seeds
1/2 cup Vegetable oil
1/4 cup Rice vinegar
2 tablespoons Soy sauce
2 tablespoons Honey
1 teaspoon Sesame oil
1 teaspoon Ginger (minced)
Instructions
1. Crush the ramen noodles while still in their packaging, then discard the seasoning packets. Toast the crushed noodles and sliced almonds in a dry skillet over medium heat until golden brown, about 3-5 minutes. Set aside to cool.
2. In a large mixing bowl, combine the shredded cabbage, carrots, sliced green onions, red bell pepper, and cooked edamame. Toss to mix evenly.
3. In a small bowl or jar, whisk together the vegetable oil, rice vinegar, soy sauce, honey, sesame oil, and minced ginger until well combined.
4. Just before serving, add the toasted ramen noodles and almonds to the vegetable mixture. Pour the dressing over the top and toss everything together until well coated.
5. Garnish with sesame seeds and serve immediately for maximum crunch.
Notes
Pro-Tips for the Perfect Asian Ramen Noodle Salad:
• Toast the ramen noodles and almonds in a dry skillet over medium heat for 3-5 minutes until golden brown. This step adds incredible depth of flavor and crunch.
• Prepare the dressing in advance and let it sit for at least 15 minutes. This allows the flavors to meld together beautifully.
• Add the dressing just before serving to maintain the salad’s crunch. If making ahead, store dressing separately.
• Use a mandoline for perfectly thin vegetable slices if you want a more refined presentation.
• Don’t skip the edamame – it adds protein and a wonderful texture that complements the other ingredients.
Delicious Variations to Try:
• Protein-Packed Version: Add grilled chicken, shrimp, or tofu for a complete meal.
• Spicy Kick: Add a tablespoon of sriracha or chili oil to the dressing for heat lovers.
• Fruit Fusion: Add mandarin orange segments or mango cubes for a sweet contrast to the savory elements.
