Bursting with colorful ingredients and zesty lime juice, this Avocado Corn and Black Bean Salsa is the perfect appetizer for parties, potlucks, or a healthy snack. Creamy avocados, sweet corn, hearty black beans, and juicy cherry tomatoes come together in every crunchy, creamy bite. Ready in minutes and utterly irresistible!

  • Total Time: 10
  • Yield: 6 servings

Ingredients

~2 cups diced avocado (from 2 small/medium avocados)

1 cup roasted corn (frozen or canned, drained)

1 cup black beans (canned, drained and rinsed)

1 cup cherry tomatoes, diced

~2 tablespoons fresh cilantro, chopped

2–3 tablespoons fresh lime juice (from 1–2 limes)

Salt to taste

Instructions

1. Prep the Ingredients — Dice the avocados and cherry tomatoes. Chop the cilantro. Juice the limes. Drain and rinse the black beans. If using frozen roasted corn, microwave for 10–20 seconds to thaw slightly.

2. Combine in a Large Bowl — Add the diced avocados, roasted corn, black beans, cherry tomatoes, and chopped cilantro to a large mixing bowl.

3. Mix Gently — Using a large spoon, carefully fold the ingredients together until evenly distributed. Be gentle to avoid mashing the avocados.

4. Add Lime Juice and Salt — Pour the fresh lime juice over the salsa and sprinkle with salt to taste. Mix again gently.

5. Serve Immediately — Enjoy with tortilla chips, on tacos, or as a topping for grilled chicken or fish.

Notes

Use ripe but firm avocados — They should yield slightly to gentle pressure but not be mushy. This prevents the salsa from becoming too creamy and losing its texture.

Frozen roasted corn tip: Microwave for 10–20 seconds to help release its natural sweetness and enhance the overall flavor.

Drain and rinse beans thoroughly — This removes excess sodium and any canning liquid that could make the salsa watery.

Add lime juice just before serving — This prevents the avocados from browning and keeps the salsa tasting bright and fresh.

Make ahead tip: Prepare all ingredients except the avocados and lime juice. Store separately in the refrigerator and add both just before serving.

Storage: Best enjoyed within 1–2 days due to the fresh avocados. Store in an airtight container in the refrigerator.

Bean substitutes: Pinto beans, kidney beans, or white beans all work well in place of black beans.

Variations: Add finely diced jalapeño or red pepper flakes for heat. Mix in crumbled feta or drained chickpeas for extra protein. Add diced mango or pineapple for a tropical twist.
