This Blueberry Lemon Cake is the quintessential spring dessert. It’s incredibly moist and tender, thanks to the addition of sour cream, and bursting with fresh, juicy blueberries in every bite. Infused with bright lemon zest and finished with a simple lemon glaze, it balances sweet and tart flavors perfectly. It’s an easy, one-bowl tea cake that looks beautiful enough for Easter brunch or Mother’s Day.

  • Total Time: 60
  • Yield: 8 slices

Ingredients

— The Cake Batter —

2 large eggs, room temperature

1 cup granulated sugar

1 cup sour cream (or plain Greek yogurt)

½ cup vegetable oil (or light olive oil)

1 teaspoon vanilla extract

¼ teaspoon salt

2 cups all-purpose flour

2 teaspoons baking powder

1 tablespoon lemon zest (from about 1 lemon)

½ tablespoon fresh lemon juice

— The Berries —

16 oz (approx. 2 ½ cups) fresh blueberries, rinsed and drained

½ tablespoon cornstarch (or flour)

1 teaspoon lemon juice

— The Lemon Glaze —

1 cup powdered sugar

1–2 tablespoons fresh lemon juice (add more for thinner glaze)

Lemon slices or extra berries for garnish

Instructions

1. **Preheat & Prep:** Preheat your oven to 375°F (190°C). Lightly butter a 9-inch springform pan (or round cake pan) and line the bottom with parchment paper. This ensures the cake releases perfectly.

2. **Whisk Wet Ingredients:** In a large mixing bowl, beat the eggs and sugar on high speed with an electric hand mixer for about 5 minutes, until the mixture is thick, pale, and doubled in volume. Add the sour cream, oil, vanilla, and salt. Whisk on low speed just until combined.

3. **Add Dry Ingredients:** In a separate small bowl, whisk together the flour and baking powder. Add this to the wet ingredients in two batches, mixing on low speed (or folding by hand) until just incorporated. Do not overmix! Stir in the lemon zest and ½ tablespoon lemon juice.

4. **Prep Berries:** In a medium bowl, toss the rinsed (and well-drained) blueberries with the cornstarch and 1 teaspoon of lemon juice. Stir until the berries are coated and no dry white powder remains. This prevents them from sinking to the bottom of the cake.

5. **Assemble:** Pour about half of the batter into the prepared pan and spread it evenly. Top with half of the blueberries. Spread the remaining batter over the top, then scatter the remaining blueberries over the surface, pressing them slightly into the batter.

6. **Bake:** Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly after 30 minutes, loosely tent the pan with aluminum foil.

7. **Cool & Glaze:** Let the cake cool in the pan for 15–20 minutes, then remove the ring and transfer to a wire rack to cool completely. Whisk the powdered sugar and lemon juice together to make a smooth glaze. Drizzle generously over the cooled cake before serving.

Notes

Fresh vs. Frozen: Fresh blueberries are best for this recipe. If you must use frozen, do not thaw them (they will bleed into the batter) and add a few extra minutes to the baking time.

Pan Choice: A springform pan is ideal because this is a moist, heavy cake that can be hard to flip out of a standard pan. If using a regular round pan, grease it very well.

The ‘Sinking’ Trick: The batter is thick enough to hold the berries, but tossing them in cornstarch/flour provides extra insurance that they stay distributed throughout the cake.

Storage: This cake stays moist for days! Store covered at room temperature for up to 2 days, or in the refrigerator for up to 5 days.
