Ingredients
— The Tomato Topping —
2 cups cherry or grape tomatoes (multi-colored looks best), quartered
2 tablespoons extra virgin olive oil
1 clove garlic, minced
¼ cup fresh basil leaves, chiffonade (thin ribbons)
¼ teaspoon salt
¼ teaspoon freshly cracked black pepper
— The Bread —
1 French baguette, sliced diagonally into ½-inch thick pieces
2 tablespoons olive oil (for brushing)
1 whole clove garlic, peeled (for rubbing)
— Assembly —
2 balls (8 oz/225g total) fresh Burrata cheese
Balsamic Glaze (thick syrup, not vinegar)
Flaky sea salt (like Maldon) for finishing
Instructions
1. **Marinate Tomatoes:** In a medium bowl, combine the quartered tomatoes, minced garlic, chopped basil, 2 tablespoons olive oil, salt, and pepper. Toss well and let it sit for 10–15 minutes while you prep the bread. (This allows the juices to release and flavors to meld).
2. **Toast Bread:** Preheat your oven broiler or a grill pan. Brush both sides of the baguette slices lightly with olive oil.
3. Toast or grill for 2–3 minutes per side until golden brown and crispy.
4. **Garlic Rub:** As soon as the bread comes off the heat, take the whole peeled garlic clove and rub it gently over the hot surface of each slice. The heat melts the garlic slightly, infusing the bread with flavor.
5. **Prep Burrata:** Drain the burrata balls. Place them in a bowl and gently break them open with a fork to reveal the creamy stracciatella interior.
6. **Assemble:** Spread a generous spoonful of the creamy burrata onto each slice of toasted bread.
7. Top with a scoop of the marinated tomato mixture.
8. **Finish:** Drizzle with balsamic glaze. Sprinkle with a pinch of flaky sea salt and garnish with extra small basil leaves if desired.
9. **Serve:** Serve immediately while the bread is crisp and the cheese is cool.
Notes
The Cheese: Burrata is essential here for the creamy texture. If you can’t find it, fresh mozzarella pearls mixed with a little heavy cream is a decent substitute.
Avoid Sogginess: Assemble these just before serving. If they sit for more than 30 minutes, the tomato juices will make the bread soggy.
Balsamic Glaze vs. Vinegar: Make sure to use Glaze (or reduction). Standard vinegar is too watery and will run off the bread. You can buy glaze or make it by simmering vinegar with sugar until thick.
Room Temperature: Take the burrata out of the fridge 20 minutes before serving. The flavor and creaminess are much better when not ice-cold.
