Ingredients
— The Beef Base —
1.5 lbs (700g) lean ground beef
1 small yellow onion, diced
1 can (10.75 oz) condensed Cheddar Cheese soup (or Cream of Mushroom)
½ cup milk (or sour cream for richness)
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
½ teaspoon garlic powder
Salt and black pepper to taste
— The Layers —
2 cups shredded Cheddar cheese, divided
1 bag (28-32 oz) frozen french fries (crinkle cut or tater tots work best)
Optional toppings: Diced pickles, cooked bacon bits, chopped tomatoes
Instructions
1. **Preheat:** Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray.
2. **Brown the Beef:** In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onions are soft. Drain excess grease.
3. **Make the Sauce:** Reduce heat to low. Stir in the condensed soup, milk, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper. Mix well and let it simmer for 1–2 minutes until combined and creamy.
4. **Assemble:** Pour the beef mixture into the prepared baking dish and spread it into an even layer.
5. Sprinkle 1 cup of the shredded cheddar cheese directly over the beef.
6. **Top:** Arrange the frozen french fries in a single layer over the cheese. (Try not to overlap them too much so they get crispy).
7. **Bake:** Bake for 35–40 minutes, or until the fries are golden brown and crispy and the sauce is bubbling up around the edges.
8. **Finish:** Remove from oven. Sprinkle the remaining 1 cup of cheese over the hot fries. Return to the oven for 3–5 minutes until the cheese melts.
9. **Serve:** Let cool for 5 minutes. Top with pickles or bacon if desired and serve hot.
Notes
Crispy Fries Tip: To ensure the fries don’t get soggy from the steam below, you can bake the fries separately on a baking sheet for 15 minutes to crisp them up *before* adding them to the top of the casserole for the final bake.
Soup Substitute: If you don’t like condensed soup, you can make a quick homemade cheese sauce with butter, flour, milk, and melted Velveeta or cheddar.
Veggie Boost: You can hide veggies in the beef base! Stir in a cup of frozen peas and carrots or diced bell peppers with the meat.
Storage: Leftovers can be stored in the fridge for 3 days. Reheat in the oven or air fryer to re-crisp the fries (microwaving will make the fries soft).
