A modern, fun, and unbelievably crispy twist on a classic! This Cheesy Potato Waffle Topped Cottage Pie swaps traditional mash for a golden, crunchy layer of mini potato waffles and a blanket of glorious melted cheese for a perfect weeknight dinner.

  • Total Time: 40
  • Yield: 4

Ingredients

300g Quorn Vegetarian Mince

1 large carrot, chopped

Handful of mushrooms, sliced

100g frozen peas

1 small white onion, diced

1 cottage pie sachet mixture

1/2 pack mini potato waffles (approx. 200g)

100g of mixed grated cheese (cheddar & mozzarella)

Spray oil

Instructions

1. Get Ready: First things first, preheat your oven to 180°C (350°F). Spread your mini potato waffles on a baking sheet and cook them according to the package instructions.

2. Sauté the Veggies: While the waffles are cooking, heat a bit of spray oil in a large saucepan over medium heat. Add your chopped onion, mushrooms, and carrot. Fry them, stirring occasionally, until they become soft and fragrant.

3. Build the Filling: Add the Quorn Vegetarian Mince to the saucepan. Stir in the cottage pie seasoning sachet along with the amount of water specified on the packet. Bring the mixture to a gentle simmer and let it cook for 5 minutes.

4. Add the Peas: Stir in the frozen peas and cook for another minute until they are heated through.

5. Assemble Your Pie: Pour the savory Quorn filling into an ovenproof dish and spread it out evenly. Arrange the cooked mini potato waffles on top, covering the entire surface.

6. Make it Cheesy & Bake: Sprinkle your mixed grated cheese generously over the potato waffles. Place the dish in the oven and bake for 15 minutes, or until the cheese is bubbly and the top is golden and crispy.

7. Serve and Devour: Let the pie rest for a minute before serving. Dish it up with your favorite steamed or roasted vegetables for a complete and delicious meal!

Notes

Crispy Waffles: For the best texture, ensure your potato waffles are cooked and crispy before adding them to the top of the pie.

Make Ahead: You can assemble the entire pie and refrigerate for up to 24 hours before baking. You may need to add 5-10 minutes to the baking time.

Meat Version: Feel free to substitute the Quorn mince with 300g of ground beef or lamb. Simply brown it first and drain any excess fat.
