These Creamy Crack Chicken Pinwheels are a legendary party staple for a reason. They combine succulent, shredded chicken with a rich, tangy, and herb-forward cream cheese filling, all snugly rolled in a tender flour tortilla. The result is a neat, handheld bite that’s incredibly more-ish. Perfect for game day, holiday platters, baby showers, or a quick protein-packed lunch.

  • Total Time: 80
  • Yield: 40-50 pinwheels

Ingredients

8 oz Cream cheese, softened

½ cup Sour cream

1 packet (1 oz) Dry ranch dressing mix

2 cups Cooked chicken, shredded

6-8 slices Bacon, cooked and crumbled

1 cup Sharp cheddar cheese, shredded (reserve 2 tbsp for topping)

½ cup Green onions, chopped (divide white and green parts)

8-10 Large (10-inch) flour tortillas

Fresh parsley, chopped (optional, for garnish)

Instructions

1. Prepare Filling: In a large bowl, using an electric mixer, beat the softened cream cheese and sour cream on medium speed until smooth and creamy, about 2 minutes.

2. Season: Add the entire packet of dry ranch dressing mix. Beat on low speed until fully incorporated.

3. Add Mix-ins: Fold in the shredded chicken, crumbled bacon, shredded cheddar cheese, and the white parts of the green onions. Use a spatula to mix until evenly distributed.

4. Assemble Logs: Lay one tortilla flat. Spread about ¾ cup of the chicken mixture evenly over the surface, covering in a thin, even layer from edge to edge.

5. Roll: Starting from one edge, roll the tortilla up tightly around the filling into a log. Press firmly to eliminate gaps.

6. Chill: Place the rolled log seam-side down on a sheet of plastic wrap. Wrap it tightly, twisting the ends. Repeat with remaining tortillas. Refrigerate for at least 1 hour, or up to 24 hours.

7. Slice & Serve: Unwrap logs. Using a serrated knife, slice into 1-inch thick pinwheels. Arrange on a platter, sprinkle with reserved cheddar, green onion parts, and parsley.

Notes

Pro-Tips:

• Ensure cream cheese is at room temperature to prevent lumps.

• Leave a ½-inch border around the edge of the tortilla when spreading to prevent seepage.

• The plastic wrap chill step is non-negotiable for clean cuts and beautiful presentation.

Variations:

• Vegetarian: Replace chicken with black beans and add diced bell peppers.

• Spicy Kick: Add sliced jalapeños or a dash of hot sauce to the mixture.

• Cheese Twist: Swap cheddar for Monterey Jack, Pepper Jack, or a Mozzarella-Parmesan blend.
