Whether you’re planning a summer barbecue, need a quick weeknight side, or want to meal prep for the week ahead, this recipe is your answer.

  • Total Time: 145
  • Yield: 8 servings

Ingredients

1 pound Pasta (rotini or bowtie)

1 cup Mayonnaise

1/2 cup Sour cream

1 packet (1 oz) Ranch dressing mix

1 medium Red bell pepper, diced

1 medium Cucumber, diced

1/2 cup Red onion, finely chopped

1 cup Cherry tomatoes, halved

1 cup Shredded cheddar cheese

1/4 cup Fresh parsley, chopped

Salt and pepper, To taste

Instructions

1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.

2. In a large mixing bowl, combine mayonnaise, sour cream, and ranch dressing mix. Stir until smooth and well combined.

3. Add the cooled pasta to the bowl with the dressing mixture. Toss gently to coat all pasta pieces evenly.

4. Add diced red bell pepper, cucumber, red onion, cherry tomatoes, and shredded cheddar cheese to the pasta mixture.

5. Gently fold in the vegetables and cheese until evenly distributed throughout the salad.

6. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow flavors to develop and meld together.

7. Before serving, give the salad a gentle stir and adjust seasoning with salt and pepper if needed. Garnish with fresh chopped parsley.

Notes

Pro-Tips for Perfect Results:

• Always cook pasta al dente – it will continue to soften slightly when mixed with the dressing. This prevents your salad from becoming mushy.

• Let the pasta cool completely before adding the dressing to prevent it from becoming oily or separating.

• Don’t skip the chilling time! The flavors need at least 2 hours to meld together properly.

• Taste and adjust seasoning before serving – sometimes pasta salads need an extra pinch of salt after chilling.

• Save some fresh herbs to sprinkle on top just before serving for the best visual appeal and flavor.

Delicious Variations to Try:

• Add cooked and crumbled bacon for a smoky, savory twist that complements the ranch flavors perfectly.

• Incorporate diced ham or chicken for a protein-packed main dish salad that’s perfect for lunch or light dinner.

• Try adding sliced black olives, artichoke hearts, and sun-dried tomatoes for a Mediterranean-inspired version.
