Ingredients
16 oz pasta, cooked (brown rice penne recommended)
2 tablespoons olive oil
1 shallot, minced
5 garlic cloves, minced
1 teaspoon salt, plus additional to taste
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
2 tablespoons tomato paste
1¾ cups cottage cheese (or silken tofu for plant-based option)
1½ cups roasted red peppers
1/3 cup fresh basil leaves, plus additional for topping
2 tablespoons nutritional yeast
Instructions
1. Sauté the Aromatics — Heat olive oil in a large skillet over medium heat. Add minced shallot and garlic, sautéing for 3–5 minutes until softened and fragrant, stirring regularly to prevent burning.
2. Cook the Pasta — While aromatics cook, bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions, then drain and set aside, reserving about ½ cup of pasta water.
3. Add Spices and Tomato Paste — To the skillet, add salt, black pepper, oregano, basil, and red pepper flakes if using. Stir in tomato paste and cook for 2–3 more minutes until everything becomes aromatic. Remove from heat and let cool slightly.
4. Build the Sauce — In a blender or food processor, combine cottage cheese, roasted red peppers, fresh basil leaves, and nutritional yeast. Transfer the cooled shallot and garlic mixture to the blender.
5. Blend — Blend on high speed for 60–90 seconds until completely smooth and creamy. Taste and adjust seasoning if needed.
6. Combine — Pour the sauce over the cooked pasta, tossing to coat evenly. If the sauce seems too thick, add reserved pasta water a tablespoon at a time until you reach your desired consistency.
7. Serve — Serve immediately, topped with additional fresh basil if desired. For meal prep, store sauce and pasta separately in airtight containers in the refrigerator for up to 5 days.
Notes
Take your time with the aromatics — Caramelizing the shallots and garlic slowly builds a flavor foundation that can’t be rushed.
Cool before blending — Let the sautéed mixture cool slightly before blending to prevent hot steam from creating pressure in your blender.
Season generously — Taste and adjust seasoning at multiple stages. The sauce should be slightly saltier than you think since it will coat a pound of pasta.
Blend on high — For the smoothest sauce, blend on high speed for at least 60 seconds.
Plant-based option: Substitute cottage cheese with silken tofu for an equally creamy, dairy-free sauce.
Storage: Store leftovers in an airtight container for up to 5 days. Add a splash of water or broth when reheating as the sauce may thicken when chilled.
Freezing: The sauce freezes beautifully for up to 3 months. Freeze separately from the pasta. Thaw overnight in the refrigerator before reheating.
Variations: Add grilled chicken, shrimp, or white beans for a protein boost. Transfer to a casserole dish, top with mozzarella, and bake for a baked pasta version. Blend in baby spinach or kale for extra nutrition. Try rigatoni or fusilli to capture more sauce in every bite.
