Ingredients
— The Chicken —
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon soy sauce
½ cup cornstarch (essential for the crispy coating)
Vegetable oil, for shallow frying
— The Noodles —
10 oz (300g) egg noodles (fresh or dried) or ramen noodles
1 teaspoon sesame oil (to prevent sticking)
— The Garlic Sauce —
2 tablespoons vegetable oil
6–8 cloves garlic, minced (be generous!)
¼ cup soy sauce (low sodium recommended)
2 tablespoons oyster sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
½ teaspoon red pepper flakes (optional, for heat)
— Garnish —
2 green onions, sliced
Toasted sesame seeds
Instructions
1. **Prep Chicken:** In a bowl, toss the chicken pieces with 1 tablespoon of soy sauce to coat. Add the cornstarch and toss well until every piece is thoroughly coated and dry looking.
2. **Cook Noodles:** Boil the noodles according to package instructions (usually 3–4 minutes). Drain, rinse with cold water to stop cooking, and toss with 1 teaspoon of sesame oil to prevent clumping. Set aside.
3. **Fry Chicken:** Heat about ½ inch of vegetable oil in a large wok or deep skillet over medium-high heat. Add the chicken pieces in a single layer (cook in batches if needed). Fry for 3–4 minutes per side until deep golden brown and crispy. Remove and drain on a paper towel-lined plate.
4. **Sauté Garlic:** Carefully discard most of the frying oil, leaving about 1 tablespoon in the pan (or use a clean pan). Turn heat to medium. Add the minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant and lightly golden (do not burn!).
5. **Make Sauce:** Stir in the soy sauce, oyster sauce, brown sugar, and sesame oil. Let the sauce bubble and thicken slightly for about 1 minute.
6. **Combine:** Add the cooked noodles and the crispy chicken back into the pan.
7. **Toss:** Toss everything vigorously for 1–2 minutes until the noodles are hot and everything is evenly coated in the garlic sauce.
8. **Serve:** Remove from heat. Garnish with green onions and sesame seeds. Serve immediately while the chicken is still crunchy.
Notes
Cornstarch vs. Flour: Cornstarch is the secret to a light, super-crispy crust that mimics takeout chicken. Flour tends to be heavier and softer.
Noodle Choice: Fresh Chinese egg noodles (lo mein style) are best, but instant ramen noodles (discard the seasoning packet) or even spaghetti work well in a pinch.
Veggie Add-ins: You can easily add bok choy, spinach, or snap peas to the pan when you add the sauce for a complete meal.
Storage: This dish is best eaten fresh. If reheating, use a skillet rather than a microwave to help bring back some texture to the chicken.
