Ingredients
— The Veggie —
2 medium zucchini, washed and dried
1/2 teaspoon salt (for drawing out moisture)
— The Dredging Station —
2 large eggs, beaten
1 cup superfine almond flour
1/2 cup grated Parmesan cheese (the dusty kind works best for crunch)
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray (olive oil or avocado oil)
Instructions
1. **Prep Zucchini:** Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a wire cooling rack on top (optional, but helps them get crispy on all sides).
2. **Cut & Sweat:** Cut the zucchini into fries (about 3 inches long and 1/2 inch thick). Place them in a colander or on paper towels and sprinkle with the 1/2 teaspoon of salt. Let them sit for 15–20 minutes to draw out excess water. Pat them **very dry** with paper towels. (Do not skip this, or your fries will be soggy!).
3. **Make the Breading:** In a shallow bowl, whisk the eggs until smooth. In a separate shallow bowl, combine the almond flour, Parmesan cheese, Italian seasoning, garlic powder, onion powder, and pepper.
4. **Dredge:** Working in batches, dip the dried zucchini sticks into the egg wash, shaking off any excess. Then, press them firmly into the almond flour mixture, ensuring they are coated on all sides.
5. **Arrange:** Place the coated fries in a single layer on the prepared wire rack (or directly on the parchment paper). Make sure they are not touching so air can circulate.
6. **Bake:** Lightly mist the tops of the fries with cooking spray. Bake for 20–25 minutes, flipping them halfway through, until they are golden brown and crispy.
7. **Serve:** Remove from the oven and serve immediately while hot. They pair perfectly with sugar-free marinara sauce or ranch dressing.
Notes
**Soggy Fries?** The #1 enemy of crispy zucchini is water. Make sure you sweat them with salt and pat them completely dry before breading.
**Air Fryer Method:** Preheat air fryer to 400°F (200°C). Arrange fries in a single layer in the basket (cook in batches if needed). Spray with oil and cook for 10–12 minutes, shaking the basket halfway through.
**Spice it Up:** Add a pinch of cayenne pepper or smoked paprika to the breading mix for a spicy kick.
**Cheese:** Using grated parmesan (the dry shaker style) often creates a crispier crust than shredded fresh parmesan, which can melt and get oily.
