These Crockpot French Onion Meatballs combine two comfort food favorites into one savory, effortless meal. Juicy meatballs are slow-cooked in a rich, beefy onion gravy loaded with tender caramelized onions. Topped with melty Swiss cheese and served with crusty bread, it tastes just like the famous soup but hearty enough for dinner.

  • Total Time: 310
  • Yield: 6 servings

Ingredients

1 bag (32 oz / 900g) frozen homestyle meatballs (beef or pork blend works best)

2 large yellow onions, thinly sliced

4 tablespoons unsalted butter, melted

2 cups beef broth (rich/low sodium)

1 can (10.5 oz) French Onion Soup (condensed) OR 1 packet dry onion soup mix

1 tablespoon Worcestershire sauce

1 tablespoon balsamic vinegar (adds depth)

1 teaspoon fresh thyme leaves (or ½ tsp dried)

½ teaspoon black pepper

2 cups shredded Swiss or Gruyère cheese

Optional: Sliced baguette or croutons for serving

Instructions

1. **Prep Onions:** Place the thinly sliced onions and melted butter at the bottom of a 6-quart slow cooker. Toss to coat. (This helps them caramelize slightly during the long cook).

2. **Add Meatballs:** Pour the frozen meatballs on top of the onions.

3. **Make the Sauce:** In a medium bowl or measuring cup, whisk together the beef broth, condensed French Onion soup (or dry mix), Worcestershire sauce, balsamic vinegar, thyme, and pepper.

4. **Pour:** Pour the sauce mixture evenly over the meatballs.

5. **Slow Cook:** Cover and cook on **LOW for 5–7 hours** or **HIGH for 3–4 hours**. The onions should be very soft and the meatballs hot and tender.

6. **Melt Cheese:** About 15 minutes before serving, sprinkle the shredded Swiss or Gruyère cheese evenly over the top of the meatballs.

7. Cover and cook on HIGH for 10–15 minutes, or until the cheese is completely melted and bubbly.

8. **Serve:** Serve immediately. For the full experience, ladle over a slice of toasted baguette or mashed potatoes.

Notes

Caramelization Tip: If you have extra time, sauté the sliced onions in the butter on the stove for 10 minutes before adding them to the crockpot. This deepens the flavor significantly, though the ‘dump-and-go’ method works well too.

Thickening: The sauce is naturally brothy (like the soup). If you prefer a thicker gravy, mix 1 tablespoon cornstarch with 1 tablespoon water and stir it in 30 minutes before the end.

Cheese: Gruyère is traditional for French Onion soup, but Swiss or Provolone are great, affordable alternatives that melt beautifully.

Serving: These make a great appetizer with toothpicks, or a full meal served over egg noodles or mashed potatoes.
