Capture the magic of dessert in a healthy breakfast! These Strawberry & Chocolate Overnight Oats are incredibly creamy and topped with a satisfying, crackly ‘magic’ chocolate shell. A perfect make-ahead breakfast for busy mornings.

  • Total Time: 6 hours 16 minutes
  • Yield: 2

Ingredients

Strawberry Overnight Oats

8-10 medium ripe strawberries (mashed or blended)

1 cup rolled oats

1 Tablespoon almond butter

1 cup vanilla almond milk

2 Tablespoons maple syrup (or to taste)

1/4 cup vanilla Greek yogurt

Dark Chocolate Topping

2 Tablespoons dark chocolate chips

1 teaspoon coconut oil

1 teaspoon crumbled freeze dried strawberries

Instructions

1. Prepare the Strawberries: Start by either mashing your ripe strawberries with a fork in a small bowl or giving them a quick pulse in a blender until they are broken down but still have a little texture.

2. Combine the Ingredients: Grab your two jars. Divide the mashed strawberries, rolled oats, almond butter, vanilla almond milk, maple syrup, and Greek yogurt evenly between them.

3. Mix and Chill: Stir the ingredients in each jar until everything is well combined and creamy. Secure the lids and place the jars in the refrigerator for at least 4-6 hours, but preferably overnight.

4. Create the Magic Shell: In the morning, place the dark chocolate chips and coconut oil in a small microwave-safe bowl. Heat for 30-45 seconds, stirring every 15 seconds, until the chocolate is completely melted and smooth.

5. Top Your Oats: Pour the melted chocolate over the chilled oats, tilting the jar to spread it into a thin, even layer that covers the top.

6. Final Touches: Immediately sprinkle the crumbled freeze-dried strawberries over the wet chocolate.

7. Set and Enjoy: Place the jars back in the fridge for about 10 minutes to allow the chocolate shell to harden completely. Then, crack it with a spoon and dive in!

Notes

Quick Version: Feel free to skip the chocolate magic shell and just mix in chocolate chips directly, if desired!

Extra Strawberry Flavor: Mix in a teaspoon of crumbled freeze-dried strawberry powder for a more pink color and more intense strawberry flavor.

Adjust Sweetness: Adjust the amount of maple syrup to your personal taste based on the sweetness of your berries.

Topping Ideas: Add any toppings that you want – shredded coconut, flaky sea salt, or a peanut butter drizzle are all delicious!
