Ingredients
⅓ cup peanut butter
2 tbsp honey
1 ½ tbsp flax meal
3 tbsp coconut flour
2 tbsp dark chocolate
Pinch of salt (optional)
Instructions
1. In a medium bowl, mix together the peanut butter, honey, flax meal, coconut flour, and a pinch of salt until a thick dough forms.
2. Melt the dark chocolate in a small bowl in the microwave in 20-second intervals, stirring in between, until smooth.
3. Lightly wet your hands and form small balls with the peanut butter mixture.
4. Using a spoon, roll each ball in the melted chocolate until it’s completely covered.
5. Place the coated balls on a plate or in an airtight container lined with parchment paper.
6. Freeze for 30-60 minutes for the chocolate to set. Keep leftovers stored in the freezer.
Notes
Low Carb Option: You can easily make this snack low-carb by leaving out the honey and using a sugar-free liquid sweetener like stevia or monk fruit syrup.
Storage: These must be stored in an airtight container in the freezer to keep their firm texture.
Rolling Tip: Lightly wetting your hands before rolling the dough will prevent it from sticking to your hands.
