When you need a foolproof dinner that’s both healthy and bursting with flavor, this easy Lemon Garlic Chicken is your answer. This one-pan wonder combines tender chicken thighs with roasted potatoes and broccoli, all coated in a bright lemon-garlic marinade. What makes this recipe truly special is how the marinade works double duty—infusing the chicken with flavor while also seasoning the vegetables.

  • Total Time: 60
  • Yield: 4 servings

Ingredients

  • 1 ½-2 pounds Boneless skinless chicken thighs
  • 1 pound Baby Dutch potatoes, quartered
  • 3 cups Broccoli florets
  • 1/3 cup Olive oil
  • 3 cloves Garlic, minced
  • 3 tablespoons Lemon juice
  • 2 teaspoons Lemon zest
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Sugar

Instructions

1. Preheat your oven to 400°F and line a large sheet pan with foil, spraying it generously with cooking spray.

2. Combine all marinade ingredients in a freezer bag, removing 2 tablespoons to reserve for the vegetables later.

3. Add chicken to the bag, seal, and turn to coat thoroughly. Let marinate at room temperature for 20 minutes while preparing potatoes.

4. Add quartered potatoes to the prepared sheet pan with 1 tablespoon of reserved marinade and ¼ teaspoon salt. Toss to coat and spread into an even layer.

5. Bake potatoes for 15 minutes, then remove from oven and push to one side of the pan.

6. Add broccoli to the empty side, toss with remaining 1 tablespoon reserved marinade, and push next to potatoes.

7. Arrange marinated chicken in a single layer on the pan and return to oven.

8. Bake uncovered for 17-22 minutes, until chicken reaches 170-175°F for thighs or 165°F for breasts.

9. While baking, whisk together yogurt sauce ingredients and refrigerate until ready to serve.

10. Serve hot with yogurt sauce drizzled over everything or on the side for dipping.

Notes

  • Chicken Choice: Thighs stay tender and develop better caramelization than breasts.
  • Uniformity: Cut potatoes into uniform 1-inch pieces to ensure even cooking.
  • Pan Prep: Always spray foil with cooking spray to prevent vegetables from sticking.
  • Yogurt Sauce: Don’t skip this—it adds a tangy contrast that ties the dish together.
  • Make Ahead: Marinate chicken for up to 4 hours in the fridge, or prep vegetables a day ahead.
