Ingredients
1 can (13.8 oz) refrigerated classic pizza crust dough
½ cup pizza sauce or marinara (plus extra for dipping)
1 cup shredded mozzarella cheese (or provolone)
30-40 slices pepperoni (regular or turkey pepperoni)
2 tablespoons olive oil
1 teaspoon Italian seasoning (or dried oregano)
1 tablespoon grated Parmesan cheese
Cooking spray (for the muffin tin)
Instructions
1. **Preheat:** Preheat your oven to 375°F (190°C). Generously grease a standard muffin tin with non-stick cooking spray.
2. **Prep Dough:** Roll out the pizza dough onto a lightly floured surface or parchment paper to form a rectangle. Using a pizza cutter or sharp knife, cut the dough lengthwise into 12 even strips (about 1-1.5 inches wide).
3. **Layer Ingredients:** Working with one strip at a time, brush a very thin layer of pizza sauce along the strip. Sprinkle a pinch of mozzarella cheese down the center.
4. **Add Petals:** Place pepperoni slices along the top edge of the dough strip, overlapping them slightly. Let about half of the pepperoni slice hang off the top edge of the dough (this creates the ‘petals’).
5. **Fold:** Fold the bottom half of the dough strip up over the bottom half of the pepperoni slices. The cheese and sauce should now be sandwiched inside, with the pepperoni tops sticking out.
6. **Roll:** Starting from one end, tightly roll the dough strip to form a rose shape. Pinch the seam at the end to seal it.
7. **Bake:** Place the rolled ‘rose’ into a muffin cup. Repeat with remaining strips. Brush the tops of the dough lightly with olive oil and sprinkle with Italian seasoning and Parmesan.
8. **Cook:** Bake for 15–20 minutes, or until the dough is golden brown and cooked through. If the pepperoni edges start to darken too much before the dough is done, loosely tent the pan with aluminum foil for the last 5 minutes.
9. **Serve:** Let them cool for 5 minutes before removing from the pan. Serve warm with warm marinara sauce for dipping.
Notes
Healthy Swaps: To fit the ‘Healthy Galentine’s’ theme, use whole wheat pizza dough, turkey pepperoni (lower fat), and part-skim mozzarella. You can also add thin spinach leaves before rolling for extra nutrients.
Vegetarian Option: Skip the pepperoni and use thinly sliced zucchini or eggplant rounds (microwave them for 30 seconds first to soften) to create the petals.
Dough Tips: If the dough is too sticky, keep it cold until you are ready to cut and roll. Warm dough can be hard to handle.
Make Ahead: You can assemble the roses in the muffin tin, cover with plastic wrap, and refrigerate for up to 4 hours before baking.
