Ingredients
4 large eggs (room temperature recommended)
3 tablespoons high-quality mayonnaise (Kewpie mayo is best for flavor)
1 teaspoon Dijon mustard (adds a subtle zing)
4 slices thick, soft white bread (Japanese milk bread/Shokupan is ideal)
1 tablespoon unsalted butter, softened
1 teaspoon fresh chives, finely chopped (optional)
Salt and black pepper to taste
Pinch of sugar (optional, helps balance the savory)
Instructions
1. **Boil the Eggs:** Bring a pot of water to a boil. Carefully lower the eggs into the water. Reduce heat slightly to maintain a gentle simmer and cook for exactly 9 minutes (this yields a fully set but creamy yolk without the grey ring).
2. **Ice Bath:** Immediately transfer the eggs to a bowl of ice water and let them cool for at least 5 minutes. This stops the cooking and makes peeling easier.
3. **Peel & Mash:** Peel the eggs. Place them in a medium bowl and mash them with a fork. (Tip: Leave some larger chunks for better texture; don’t mash it into a paste).
4. **Mix:** Add the mayonnaise, Dijon mustard, chives, salt, and pepper to the eggs. Stir gently until combined. Taste and adjust seasoning.
5. **Prepare the Bread:** Spread a thin layer of softened butter on one side of each slice of bread. This acts as a moisture barrier so the bread doesn’t get soggy from the mayo.
6. **Assemble:** Divide the egg salad mixture evenly between two slices of bread (on the buttered side). Spread it out to the edges.
7. **Slice:** Top with the remaining bread slices. For the classic look, carefully slice off the crusts (optional), then cut the sandwiches in half diagonally or into rectangles.
8. Serve immediately for the freshest taste.
Notes
The Mayo Matters: Since this recipe has so few ingredients, use the best mayonnaise you can find. Japanese Kewpie mayo adds a distinct rich, umami flavor that standard mayo lacks.
Bread Choice: Avoid crusty artisan bread or sourdough for this specific sandwich. You want soft, fluffy white bread (like Brioche or Milk Bread) that mimics the texture of the filling.
Peeling Trick: Older eggs peel easier than fresh ones. If your eggs are very fresh, steam them instead of boiling to make peeling easier.
Storage: The egg salad can be made 1 day in advance and stored in the fridge. Assemble the sandwich right before eating.
