Ingredients
1 cup Fresh blueberries
1 cup Lemon juice (freshly squeezed, about 6-8 lemons)
4 cups Cold water
3/4 cup Sugar
2 tablespoons Dried culinary lavender
Ice cubes (as needed)
Lemon slices and fresh lavender sprigs (for garnish)
Instructions
1. Start by creating the lavender simple syrup. In a small saucepan, combine 1 cup of water with the sugar and dried lavender. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves completely. Remove from heat and let steep for 5-7 minutes, then strain through a fine-mesh sieve into a heat-safe container.
2. While the syrup cools, juice your fresh lemons until you have one full cup of juice. Strain to remove any pulp or seeds if desired.
3. In a blender, combine the fresh blueberries with 1/2 cup of cold water and blend until completely smooth. Strain this mixture through a fine-mesh sieve to remove the skins and create a silky blueberry puree.
4. In a large pitcher, combine the lavender syrup, fresh lemon juice, blueberry puree, and remaining cold water. Stir thoroughly to combine all the flavors.
5. Refrigerate for at least one hour to allow the flavors to meld together beautifully. Serve over ice with lemon slices and fresh lavender sprigs for garnish.
Notes
Pro-Tips:
• Always use culinary-grade lavender meant for consumption.
• For the most vibrant color, use fresh blueberries at room temperature.
• Steep lavender for exactly 5-7 minutes to avoid a medicinal flavor.
Variations:
• Add a splash of vodka or gin for an adults-only version.
• Substitute honey for sugar for a more complex floral sweetness.
• Mix with sparkling water instead of still water for a bubbly twist.
