There’s nothing quite like a bowl of freshly made Pico de Gallo Salsa. Unlike cooked salsas, this vibrant, uncooked “salsa fresca” is a handheld explosion of flavor. Its magic lies in the perfect, bright balance of juicy tomatoes, crisp white onion, tangy lime, and the herbal punch of cilantro. It’s a versatile staple that elevates tacos, grilled meats, and chips with a burst of fresh flavor.

  • Total Time: 30
  • Yield: 4 servings

Ingredients

4 medium Ripe tomatoes (Roma or vine-ripened), seeded and finely diced

½ medium White onion, finely diced

½ cup Fresh cilantro, chopped

1-2 Jalapeño peppers, seeded and finely minced

2-3 tbsp Fresh lime juice

1 small clove Garlic, minced to a paste (optional)

½ tsp Fine sea salt (or to taste)

Instructions

1. Prep: Wash and dry all produce. Seed the tomatoes to prevent excess water, then finely dice. Finely dice the white onion. Mince the jalapeño (remove seeds for less heat) and chop the cilantro.

2. Combine: In a medium mixing bowl, combine the diced tomatoes, onion, minced jalapeño, and chopped cilantro.

3. Season: Add the lime juice, minced garlic (if using), and salt. Toss gently to combine.

4. Rest & Serve: Allow the salsa to sit at room temperature for 10-15 minutes to let the flavors marry. Taste and adjust salt or lime juice before serving.

Notes

Pro-Tips:

• Seed your tomatoes before dicing to ensure your salsa remains chunky and not watery.

• Dice all ingredients uniformly so every spoonful provides a balanced mix of flavors.

• If you find raw onion too pungent, rinse the diced onion in a strainer under cold water and pat dry before adding to the bowl.

Variations:

• Tropical: Add 1/4 cup of finely diced pineapple or mango.

• Creamy: Stir in finely diced avocado right before serving.

• Smoky: Add 1/4 teaspoon of ground cumin for extra depth.
