  • Total Time: 35
  • Yield: 10 tacos

Ingredients

— The Pancake ‘Shells’ —

1 ½ cups all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

½ teaspoon salt

1 large egg

1 ¼ cups milk (dairy or plant-based)

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Butter or oil (for the pan)

— The Cheesecake Filling —

8 oz (225g) cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup heavy whipping cream (liquid)

— The Toppings —

1 cup strawberries, diced small

½ cup blueberries

½ cup kiwi or mango, diced small

Maple syrup or chocolate sauce (for drizzling)

Fresh mint leaves (optional garnish)

Instructions

1. **Make the Batter:** In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate jug, whisk the egg, milk, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).

2. **Cook Pancakes:** Heat a large non-stick skillet or griddle over medium heat and lightly grease with butter. Pour small amounts of batter (about ¼ cup per pancake) onto the skillet to make 4-inch rounds. Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook until golden brown on the other side.

3. **Shape the Tacos:** *Crucial Step:* While the pancakes are still warm and flexible, gently curve them into a taco shape. You can place them in a taco holder or arrange them side-by-side in a baking dish to help them hold their shape as they cool.

4. **Make the Filling:** In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth. Slowly pour in the heavy whipping cream while beating continuously until the mixture becomes fluffy and holds soft peaks.

5. **Assemble:** Pipe or spoon a generous dollop of the cream filling into the center of each cooled pancake taco.

6. **Top & Serve:** Top with the diced strawberries, blueberries, and kiwi. Finish with a drizzle of maple syrup or chocolate sauce and serve immediately.

Notes

Time Saver: You can use your favorite boxed pancake mix to speed up the process. Just add a splash of vanilla extract to the batter for extra flavor.

Keep Them Warm: If making a large batch for a party, keep the cooked pancakes in a single layer on a wire rack in a warm oven (200°F) until you are ready to fill and assemble.

Yogurt Swap: For a lighter, high-protein version, swap the cream cheese filling for vanilla Greek yogurt.

Topping Bar: Set up a ‘Taco Bar’ with different fruits, nuts, chocolate chips, and syrups so guests can build their own pancake tacos.
