Ingredients
— The Burger Filling —
1 lb (450g) lean ground beef
1 small onion, finely diced
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
4 oz (1 cup) Cheddar cheese, cut into 8 cubes (or shredded)
— The Dough —
1 can (16.3 oz) refrigerated biscuit dough (Grands style, 8 count)
— The Garlic Butter Topping —
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
2 tablespoons grated Parmesan cheese
Instructions
1. **Preheat:** Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. **Cook Beef:** In a large skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is soft. Drain any excess grease.
3. **Season:** Stir in the Worcestershire sauce, ketchup, garlic powder, salt, and pepper. Cook for 1 minute longer to combine flavors. Remove from heat and **let cool completely** (hot meat will melt the dough).
4. **Prep Dough:** Separate the biscuits. Flatten each biscuit with your hand or a rolling pin into a larger circle (about 4-5 inches wide).
5. **Assemble:** Place a spoonful of the cooled beef mixture into the center of each biscuit circle. Press a cube of cheddar cheese into the middle of the beef.
6. **Seal:** Gather the edges of the dough up around the filling and pinch them tightly together to seal into a ball. Make sure there are no gaps.
7. **Bake:** Place the bombs seam-side down on the prepared baking sheet. Bake for 15–18 minutes, or until the biscuits are golden brown.
8. **Top:** While they bake, mix the melted butter, minced garlic, parsley, and parmesan cheese in a small bowl. Brush this mixture generously over the hot bombs as soon as they come out of the oven.
9. **Serve:** Serve warm, optionally with burger sauce or ketchup for dipping.
Notes
Cooling the Meat: It is crucial to let the beef mixture cool before stuffing. If it’s hot, the biscuit dough will become greasy and slippery, making it impossible to seal.
Cheese Tip: Using a cube of cheese inside (rather than shredded) ensures a gooey, molten center that doesn’t disappear into the meat.
Dough Alternative: You can use pizza dough cut into squares if you prefer a chewier crust over a fluffy biscuit texture.
Storage: Store leftovers in the fridge for up to 3 days. Reheat in the microwave or air fryer.
