Ingredients
2 tablespoons unflavored gelatin powder (grass-fed beef gelatin is recommended)
½ cup cold fruit juice (100% juice like cranberry, pomegranate, or orange)
½ cup boiling water (or hot herbal tea for extra benefits)
1 tablespoon fresh lemon juice (helps cut the gelatin taste)
1–2 teaspoons honey, maple syrup, or stevia (optional, adjust to taste)
Fresh fruit chunks (berries or orange slices) for mix-ins (optional)
Instructions
1. **Bloom the Gelatin:** Pour the cold fruit juice into a medium heat-proof bowl. Sprinkle the unflavored gelatin powder evenly over the surface of the juice. Let it sit undisturbed for 5 minutes. The mixture will wrinkle and look thick (like applesauce)—this is called ‘blooming’.
2. **Dissolve:** Pour the ½ cup of boiling water (or hot tea) directly over the bloomed gelatin. Whisk vigorously for 2–3 minutes until the granules are completely dissolved and the liquid is clear.
3. **Flavor:** Stir in the fresh lemon juice and your sweetener of choice (if using). Taste the mixture carefully—it should be pleasantly tart and sweet.
4. **Pour:** Pour the mixture into a square glass food storage container, a silicone candy mold, or small individual cups. If adding fresh fruit pieces, drop them in now.
5. **Chill:** Place in the refrigerator for at least 2–3 hours, or until the gelatin is firm to the touch and wobbly.
6. **Serve:** Run a knife around the edges and slice into small bite-sized cubes. Store in the fridge and pop a few whenever you need a healthy snack!
Notes
The ‘Trick’: Many people eat 2-3 of these cubes about 30 minutes before a meal. The gelatin expands slightly in the stomach and provides satiating protein, which can help prevent overeating.
Juice Choice: Pineapple, kiwi, mango, and papaya contain enzymes that break down gelatin and prevent it from setting. Avoid these juices unless you boil them first to neutralize the enzymes.
Warm Version: If you don’t want to wait for it to set, you can drink the mixture warm as a ‘Gut Healing Tea’ right after step 3.
Cloudy Gelatin? If your gelatin is cloudy, you likely didn’t whisk it enough in the hot water step. Make sure the water is boiling hot to fully dissolve the granules.
