  • Total Time: 70
  • Yield: 4 servings

Ingredients

For the Chicken:

1 lb Boneless, skinless chicken thighs, cut into 1-inch pieces

3 tbsp Extra-virgin olive oil

2 tbsp Lemon juice

3 cloves Garlic, minced

1 tsp Dried oregano

½ tsp Ground cumin

½ tsp Salt & ¼ tsp Black pepper

For the Bowl:

1 cup Long-grain white rice or quinoa, cooked

1 medium Cucumber, diced

1 cup Cherry tomatoes, halved

¼ cup Red onion, thinly sliced

¼ cup Kalamata olives, pitted and sliced

½ cup Feta cheese, crumbled

2 tbsp Fresh parsley, chopped

For the Tzatziki:

1 cup Plain full-fat Greek yogurt

½ cup Cucumber, grated and squeezed dry

1 clove Garlic, minced

1 tbsp Fresh dill, chopped

1 tbsp Lemon juice

1 tsp Extra-virgin olive oil

Salt and pepper to taste

Instructions

1. Marinate: Whisk olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Toss chicken to coat and refrigerate for 30 minutes to 4 hours.

2. Cook Grain: Rinse and cook rice or quinoa in 2 cups of water until tender.

3. Make Tzatziki: Combine Greek yogurt, squeezed-dry grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl. Chill.

4. Cook Chicken: Sauté chicken in a skillet over medium-high heat for 4-5 minutes per side until browned and cooked through (165°F).

5. Assemble: Divide rice/quinoa into bowls. Top with chicken, diced cucumber, tomatoes, onion, olives, and feta. Drizzle with tzatziki and garnish with parsley.

Notes

Pro-Tips:

• Squeeze as much moisture as possible from the grated cucumber for a thick, creamy tzatziki.

• Sear chicken in batches to ensure a nice caramelized crust instead of steaming the meat.

• Warm your rice or quinoa right before assembling to help wilt the fresh herbs and release aromas.

• Marinate for at least 30 minutes to ensure the chicken is flavorful and tender.

Variations:

• Swap chicken for shrimp or chickpeas for a lighter or vegetarian protein source.

• Replace rice with a bed of mixed greens or cauliflower rice for a lower-carb option.

• Add roasted red peppers or artichoke hearts for extra texture and flavor.
