These Mississippi Smokies Bites take the internet-famous flavors of Mississippi Pot Roast—ranch, au jus, and pepperoncini—and pack them into an addictive, bite-sized appetizer. Savory cocktail sausages are slow-simmered in a rich, buttery glaze with just the right amount of tang and heat. They are the ultimate ‘set it and forget it’ party snack that disappears in minutes.

  • Total Time: 185
  • Yield: 12 servings

Ingredients

2 packages (14 oz each) Lit’l Smokies (cocktail sausages)

1/2 cup (1 stick) unsalted butter, sliced

1 packet (1 oz) Ranch seasoning mix (dry powder)

1 packet (1 oz) Au Jus gravy mix

8–10 Pepperoncini peppers, whole or sliced

1/4 cup Pepperoncini juice (from the jar)

2 tablespoons brown sugar (optional, for a sweet-savory glaze)

Fresh parsley, chopped (for garnish)

Instructions

1. **Prep:** Spray the inside of a slow cooker with non-stick cooking spray for easy cleanup. Place the Lit’l Smokies in the bottom of the slow cooker.

2. **Season:** Sprinkle the dry Ranch seasoning packet and the Au Jus gravy mix evenly over the sausages. Toss gently to coat.

3. **Add Liquids & Butter:** Pour the pepperoncini juice over the mixture. Place the butter slices on top. Scatter the whole or sliced pepperoncini peppers around the sausages.

4. **Cook:** Cover and cook on **LOW** for 3–4 hours or on **HIGH** for 1–2 hours. Stir halfway through to ensure the butter and seasonings melt into a smooth, glossy sauce.

5. **Finish:** If using brown sugar (highly recommended for a sticky glaze), stir it in during the last 30 minutes of cooking. Give everything a final good stir to coat the sausages in the rich sauce.

6. **Serve:** Garnish with fresh chopped parsley. Serve warm directly from the slow cooker or transfer to a platter with toothpicks.

Notes

Oven Method: If you don’t have a slow cooker, place everything in a 9×13 baking dish. Bake at 350°F (175°C) for 30–35 minutes, stirring halfway through, until the sauce is bubbly and thickened.

Spicy Kick: For more heat, slice the pepperoncini peppers before adding them, or add a pinch of red pepper flakes.

Sausage Variations: This recipe also works great with sliced kielbasa, smoked sausage, or even frozen meatballs.

Brown Sugar Tip: Adding the brown sugar balances the saltiness of the au jus and ranch packets, creating a ‘candied’ effect that is irresistible.
