There’s something magical about the combination of juicy peaches and tart raspberries coming together in a warm, comforting cobbler. This Peach and Raspberry Cobbler is the perfect dessert for summer gatherings, offering a delightful balance of sweet and tangy flavors topped with a golden, buttery crust.

  • Total Time: 70
  • Yield: 8 servings

Ingredients

4 cups Fresh peaches, sliced

1 cup Fresh raspberries

1 cup + 2 tablespoons Sugar

1 cup All-purpose flour

1 teaspoon Baking powder

1/4 teaspoon Salt

3/4 cup Milk

1 teaspoon Vanilla extract

1/2 teaspoon Ground cinnamon

1/2 cup Butter, melted

Instructions

1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.

2. In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, and cinnamon. Let the mixture sit for about 15 minutes to allow the fruit to release its juices.

3. In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Add the milk and vanilla extract, stirring until just combined.

4. Pour the melted butter into the prepared baking dish. Pour the batter over the butter, but do not stir.

5. Spoon the fruit mixture evenly over the batter. Do not stir; the batter will rise up around the fruit as it bakes.

6. Sprinkle the top with the remaining 2 tablespoons of sugar.

7. Bake for 45-50 minutes, or until the top is golden brown and the fruit is bubbling.

8. Allow the cobbler to cool for about 15 minutes before serving.

Notes

Pro-Tips:

• Use ripe but firm peaches for the best texture.

• Don’t skip the step of letting the fruit mixture sit with sugar to draw out juices.

• When mixing the batter, be careful not to overmix.

• Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Variations:

• Peach and Blueberry: Replace raspberries with fresh blueberries.

• Peach and Ginger: Add 1-2 tablespoons of finely chopped crystallized ginger to the fruit mixture.

• Nectarine and Blackberry: Substitute nectarines for peaches and blackberries for raspberries.
