Ingredients
4 cups Fresh peaches, peeled and diced
1/2 cup Brown sugar
2 tablespoons Cornstarch
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1 teaspoon Vanilla extract
2 tablespoons Butter
12 Egg roll wrappers
Vegetable oil for frying (as needed)
Powdered sugar for dusting (as needed)
Instructions
1. Prepare the filling by combining diced peaches, brown sugar, cornstarch, cinnamon, nutmeg, and vanilla extract in a bowl.
2. Melt butter in a large skillet over medium heat. Add the peach mixture and cook until the peaches are soft and the mixture has thickened, about 5-7 minutes. Allow to cool.
3. Place an egg roll wrapper on a clean surface with one corner pointing towards you. Add 2 tablespoons of the cooled peach filling to the center of the wrapper.
4. Fold the bottom corner up over the filling, then fold in the sides. Roll the wrapper away from you, sealing the top corner with a bit of water.
5. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the rolls in batches until golden brown, about 2-3 minutes per side.
6. Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar while still warm.
Notes
Pro-Tips:
• Make sure your peaches are ripe but still firm to ensure the best texture and flavor.
• Don’t overfill the egg roll wrappers; about 2 tablespoons of filling is ideal.
• Seal the edges of the wrappers well with water to prevent leaking during frying.
• Maintain the oil temperature at around 350°F (175°C) for even cooking.
Variations:
• Peach and Blueberry: Add fresh blueberries to the filling.
• Peach Cobbler Cheesecake: Mix in some cream cheese with the peach filling.
• Baked Option: Brush with butter and bake at 400°F for 15-20 minutes.
