These Protein Bagels are a healthy, high-protein alternative to traditional bagels, made with just two main ingredients: Greek yogurt and flour. There’s no yeast, no boiling, and no rising time required. They come out of the oven fluffy, golden, and chewy—perfect for a quick breakfast sandwich or a post-workout snack.

  • Total Time: 35
  • Yield: 4 bagels

Ingredients

— The Dough —

1 cup (240g) non-fat plain Greek yogurt (must be thick, like Fage or Chobani)

1 cup (120g) all-purpose flour (or self-rising flour, see notes)

2 teaspoons baking powder (omit if using self-rising flour)

¾ teaspoon kosher salt (omit if using self-rising flour)

— Toppings (Optional) —

1 large egg, beaten (for egg wash)

Everything Bagel Seasoning

Sesame seeds or poppy seeds

Shredded cheese (Asiago or Cheddar)

Instructions

1. **Preheat Oven:** Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. If using parchment, lightly spray with oil to prevent sticking.

2. **Mix Dough:** In a large bowl, whisk together the flour, baking powder, and salt. Add the Greek yogurt and stir with a spatula until a shaggy dough forms.

3. **Knead:** Turn the dough onto a clean, lightly floured surface. Knead for about 2-3 minutes until the dough is tacky but smooth and elastic. (If the dough is too sticky, add more flour, 1 tablespoon at a time).

4. **Shape Bagels:** Divide the dough into 4 equal balls. Roll each ball into a rope about ¾-inch thick, then join the ends to form a circle. Alternatively, poke a hole in the center of the ball with your thumb and gently stretch it out to form a bagel shape.

5. **Top:** Place the bagels on the prepared baking sheet. Brush the tops generously with the beaten egg wash. Sprinkle with your desired seasoning (Everything Bagel seasoning is highly recommended!).

6. **Bake:** Bake for 25 minutes on the top rack of the oven, or until the bagels are puffed and golden brown.

7. **Cool:** Let the bagels cool on the baking sheet for at least 15 minutes before slicing. This allows the interior to finish setting so they aren’t gummy.

Notes

Flour Type: You can use self-rising flour instead of AP flour. If you do, omit the baking powder and salt from the recipe.

Yogurt Matters: Use a thick Greek yogurt. Regular yogurt is too runny and will require too much extra flour, making the bagels dense.

Gluten-Free: You can substitute a 1:1 Gluten-Free flour blend that contains xanthan gum. The texture may be slightly different but still delicious.

Storage: Store leftovers in an airtight container at room temperature for 2 days, or in the refrigerator for up to 5 days. Toast before eating for the best texture.
