These Smoky Tuna Pickle Boats are a crunchy, low-carb delight that transforms a simple pantry staple into a crave-worthy lunch. Large dill pickles are hollowed out to create edible vessels, then stuffed with a creamy tuna salad infused with smoked paprika, garlic, and a hint of chipotle. They are high in protein, keto-friendly, and ready in just 10 minutes—no cooking required!

  • Total Time: 10
  • Yield: 4 servings (8 boats)

Ingredients

— The Pickle Boats —

4 large whole dill pickles

— The Smoky Tuna Salad —

2 cans (5 oz each) tuna, drained well

1/3 cup mayonnaise (or plain Greek yogurt for a lighter version)

1 stalk celery, finely diced

2 tablespoons red onion, minced

1 teaspoon smoked paprika (this gives the signature smoky flavor)

1/2 teaspoon garlic powder

1/4 teaspoon chipotle powder or cayenne (optional, for heat)

1 tablespoon fresh dill or parsley, chopped

Salt and black pepper to taste

— Garnish —

Everything Bagel Seasoning or extra smoked paprika

Instructions

1. **Prep the Boats:** Slice the whole pickles in half lengthwise. Using a small spoon or a melon baller, carefully scoop out the seeds and soft center of each pickle half, leaving a hollow “boat” shape. (Don’t discard the scooped insides—you can chop them up and add them to the salad if you love pickles!).

2. **Dry:** Use a paper towel to pat the inside of the pickle boats completely dry. This is a crucial step to prevent the tuna salad from sliding out or becoming watery.

3. **Make the Salad:** In a medium bowl, flake the drained tuna with a fork. Add the mayonnaise, diced celery, minced red onion, smoked paprika, garlic powder, chipotle powder, and fresh herbs. Stir until well combined and creamy. Taste and season with salt and pepper.

4. **Assemble:** Spoon the tuna mixture generously into the hollowed-out pickle boats, mounding it slightly on top.

5. **Serve:** Sprinkle with Everything Bagel Seasoning or a dusting of paprika. Serve immediately for the best crunch.

Notes

Tuna Choice: Solid white albacore tuna has a firmer texture that works best for salad, but chunk light tuna works too.

Storage: These are best eaten immediately. If you need to meal prep, store the hollowed-out pickles and the tuna salad in separate containers and assemble just before eating to keep the pickles crisp.

Variations: Add a slice of cheddar cheese on top and briefly broil for a “Tuna Melt” version (warm pickle warning!), or mix in diced avocado for healthy fats.

The Scooped Seeds: If you hate waste, chop the seeded centers finely and mix them right back into the tuna salad for extra crunch and tang.
