A gorgeous, festive Strawberry Feta Spinach Salad that is absolutely perfect for your Easter table or spring gatherings! This beautiful salad combines fresh baby spinach, sweet sliced strawberries, creamy feta cheese, and crunchy candied pecans, all tossed in a bright, sweet-and-tangy homemade spring vinaigrette. It’s quick to assemble, full of fresh flavors, and stunning to serve alongside your holiday ham or brunch spread.

  • Total Time: 15
  • Yield: 6 servings

Ingredients

— The Easter Salad —

10 oz fresh baby spinach (or a mix of spinach and spring greens)

1 lb fresh strawberries, hulled and sliced or quartered

1/2 cup crumbled feta cheese

1/2 cup candied pecans or walnuts

1/4 small red onion, very thinly sliced

— Spring Vinaigrette —

1/3 cup extra virgin olive oil

3 tablespoons apple cider vinegar (or white balsamic vinegar)

2 tablespoons honey

1 tablespoon Dijon mustard

1/2 teaspoon poppy seeds (optional)

Salt and freshly ground black pepper to taste

Instructions

1. **Whisk the Vinaigrette:** In a small mason jar or bowl, combine the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper. Shake or whisk vigorously until the dressing is smooth and emulsified. Set aside.

2. **Prep the Greens:** In a large, beautiful serving bowl or platter (perfect for the Easter table!), lay down an even bed of the fresh baby spinach.

3. **Layer the Ingredients:** Evenly scatter the sliced strawberries, thinly sliced red onion, crumbled feta cheese, and candied pecans over the spinach leaves.

4. **Dress and Toss:** Just before you are ready to serve, give the dressing another quick shake and drizzle your desired amount over the salad. Gently toss to combine, being careful not to bruise the delicate spinach leaves.

5. **Serve:** Serve immediately as a vibrant side dish for your Easter feast, spring brunch, or light dinner. Keep extra dressing in a small pitcher on the side.

Notes

Prep Ahead for Easter: Save time on holiday morning by washing and slicing the strawberries and onions up to a day in advance. Make the dressing ahead of time and store it in the fridge. Assemble right before your meal to keep the spinach crisp.

Nut Variations: Candied pecans add a lovely festive touch for Easter, but toasted sliced almonds, candied walnuts, or even pistachios work beautifully.

Cheese Swaps: If your guests aren’t a fan of feta, goat cheese or mild gorgonzola crumbles are excellent, creamy substitutes.

Add Protein: Having this for a post-holiday lunch? Toss in some leftover diced Easter ham or sliced grilled chicken breast to make it a full meal!
