This Sun-Dried Tomato Avocado Grilled Cheese takes the classic comfort food to a gourmet level. Crispy, buttery sourdough bread is stuffed with gooey mozzarella, creamy avocado slices, tangy sun-dried tomatoes, and a layer of savory pesto. It’s a texture lover’s dream—crunchy, creamy, and cheesy—perfect for a quick lunch or light dinner.

  • Total Time: 20
  • Yield: 2 sandwiches

Ingredients

4 slices sturdy sourdough bread (or ciabatta/Italian loaf)

2 tablespoons unsalted butter, softened (or mayonnaise for the crust)

2 tablespoons basil pesto (store-bought or homemade)

1 cup shredded Mozzarella cheese (or Provolone)

1/2 ripe avocado, thinly sliced

1/4 cup sun-dried tomatoes packed in oil, drained and chopped

Handful of fresh spinach or basil leaves (optional)

Pinch of red pepper flakes (optional, for heat)

Instructions

1. **Prep Bread:** Butter one side of each slice of bread generously. On the non-buttered side of two slices, spread a tablespoon of basil pesto.

2. **Assemble:** Place the bread, butter-side down, in a cold skillet (or on a cutting board). Top the pesto side with half of the mozzarella cheese. Arrange the avocado slices and chopped sun-dried tomatoes on top. Add the spinach if using. Top with the remaining cheese (sandwiching the veggies between cheese layers acts as ‘glue’ to hold it together).

3. **Close:** Place the remaining slices of bread on top, pesto-side down and butter-side up.

4. **Cook:** Turn the heat to medium-low. Cook the sandwiches for 3–4 minutes, pressing down gently with a spatula, until the bottom is deep golden brown and crispy.

5. **Flip:** Carefully flip the sandwiches. Cook for another 3–4 minutes until the second side is golden and the cheese is completely melted.

6. **Serve:** Remove from the pan. Let sit for 1 minute before slicing in half (this prevents the cheese from oozing out entirely). Serve hot.

Notes

Avocado Tip: Use an avocado that is ripe but slightly firm so it holds its shape while cooking. Mushy avocado can get messy.

Cheese Melt: Shredding your own cheese from a block ensures a smoother melt than pre-shredded bags, which contain anti-caking agents.

Low & Slow: Don’t crank the heat too high! Sourdough burns easily. Cooking on medium-low ensures the cheese melts all the way through before the bread burns.

Mayo vs. Butter: You can use mayonnaise on the outside of the bread instead of butter for an extra crispy, slightly tangy crust.
