This Sweet & Spicy Pineapple Rice is a vibrant, tropical dinner that brings the flavors of a Thai island vacation right to your kitchen. Juicy chunks of fresh pineapple and tender chicken are stir-fried with aromatic jasmine rice, crunchy cashews, and a savory sauce spiked with yellow curry powder and Sriracha. Served in a hollowed-out pineapple boat for extra flair, it’s a 30-minute meal that looks as impressive as it tastes.

  • Total Time: 30
  • Yield: 4 servings

Ingredients

— The Stir-Fry Base —

3 cups cooked jasmine rice, chilled (day-old rice is best)

1 lb (450g) chicken breast or thighs, diced into bite-sized pieces

2 tablespoons vegetable oil or coconut oil

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 ½ cups fresh pineapple, cubed

½ cup roasted cashews (unsalted)

2 green onions, sliced

— The Sweet & Spicy Sauce —

2 tablespoons soy sauce (or tamari)

1 tablespoon fish sauce (optional, for authentic funk)

2 teaspoons curry powder (yellow mild curry)

1 tablespoon brown sugar

1–2 teaspoons Sriracha or chili garlic sauce (adjust to heat preference)

1 teaspoon turmeric powder (for golden color)

Instructions

1. **Prep the Sauce:** In a small bowl, whisk together the soy sauce, fish sauce, curry powder, turmeric, brown sugar, and Sriracha. Set aside.

2. **Sear Chicken:** Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the diced chicken and cook for 5–6 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.

3. **Sauté Aromatics:** Add the remaining 1 tablespoon of oil to the same pan. Add the onion and red bell pepper. Stir-fry for 2–3 minutes until slightly softened. Add the garlic and cook for another 30 seconds until fragrant.

4. **Fry the Rice:** Add the cold, cooked rice to the pan. Break up any clumps with your spatula. Pour the sauce mixture evenly over the rice. Stir-fry constantly for 3–4 minutes, ensuring the rice is evenly coated in the yellow sauce and heated through.

5. **Combine:** Toss the cooked chicken, pineapple chunks, and roasted cashews back into the pan. Stir-fry for another 1–2 minutes just to warm the pineapple (don’t overcook it or it gets watery).

6. **Serve:** Remove from heat. Stir in the sliced green onions. Serve immediately, optionally garnished with fresh cilantro and extra lime wedges.

Notes

Rice Texture: The secret to non-mushy fried rice is using cold, day-old rice. If you must use fresh rice, spread it out on a baking sheet and freeze it for 15 minutes to dry it out before cooking.

Pineapple Boat: For a fun presentation, cut a whole pineapple in half lengthwise and carefully carve out the flesh to use in the recipe. Serve the fried rice inside the hollowed-out skins.

Protein Swaps: This recipe works beautifully with shrimp (add them at the end so they don’t overcook) or firm tofu for a vegetarian option.

Vegetarian Version: Omit the fish sauce and chicken. Use soy sauce or vegetarian stir-fry sauce instead.
