Ingredients
— The Filling —
1 cup plain Greek yogurt (or hung curd) – *Must be thick!*
¼ cup grated carrots
¼ cup finely chopped bell pepper (capsicum)
2 tablespoons boiled sweet corn
2 tablespoons finely chopped onion
1 tablespoon fresh cilantro, chopped
½ teaspoon black pepper
½ teaspoon red chili flakes
½ teaspoon Italian seasoning or oregano
Salt to taste
— The Sandwich —
6-8 slices of bread (white, brown, or sourdough)
2 tablespoons butter (for toasting)
1 teaspoon mustard seeds (optional, for tempering)
Instructions
1. **Prep the Yogurt:** If your yogurt is watery, place it in a cheesecloth or fine mesh sieve over a bowl for 15-20 minutes to drain the excess whey. You need a thick, creamy consistency so the bread doesn’t get soggy.
2. **Make the Filling:** In a medium bowl, combine the thick yogurt, grated carrots, chopped bell pepper, corn, onion, and cilantro.
3. Add the black pepper, red chili flakes, Italian seasoning, and salt. Mix well. Taste and adjust seasoning.
4. **Assemble:** Take a slice of bread and spread a generous layer of the yogurt mixture on one side. Top with another slice of bread to close the sandwich.
5. **Toast:** Heat a non-stick skillet or tawa over medium heat. Add a little butter.
6. *(Optional Step: For extra flavor, sprinkle a pinch of mustard seeds into the hot butter and let them pop before placing the bread).*
7. Place the sandwich in the pan. Cook for 2-3 minutes until the bottom is golden brown and crispy.
8. Spread a little butter on the top slice, then carefully flip the sandwich.
9. Cook for another 2-3 minutes until the second side is crisp and the filling is warm.
10. **Serve:** Remove from the pan, slice diagonally, and serve immediately.
Notes
Sogginess Prevention: The key to a crisp sandwich is using THICK yogurt (Greek style or Hung Curd). If the yogurt is runny, the bread will absorb the moisture instantly.
Veggie Prep: Chop your vegetables very finely. Large chunks will make the sandwich uneven and hard to flip.
Add-ins: You can add grated cheese or paneer to the filling for extra richness.
Serving: These are best eaten immediately while warm and crispy. They do not store well as they will eventually soften.
